One of the new issues I found when testing Windows 7 was that I could consistently cause outlook 2007 to freeze after returning to a machine that had been locked.
A Microsoft KB suggested that it may have something to do with a large PST file kb 932086, but that wasn't the case for me.
I found that actually the Adobe PDF maker add-on was the culprit.

Trying to remove the add-on from the Tools > Trust center > Add-ins > Manage: COM Add-ins [ Go ] created the following error.
I found some websites that talked about doing a registry hack (really?!) but all you need to do is just remove the add-on using the add/remove programs and modify the install to exclude the PDF maker from outlook.

*Update:
This also is suggested as a possible fix KB 940226 if you have the todo list showing, consider disabling it (bottom of the page linked above.
*Update 2:
Another fix we found was that clients using GPG with the outlook add-on caused a freeze as described above.
The take away from all of this is that if you find that Outlook 2007 is acting up inside of windows 7, trying turning off all add-ons.
Doing this seems to have fixed my problem, if it works for you, consider letting others know in the comments below.
